STUFFED GRAPE LEAVES
4 cups chopped onions
1 cup olive oil
1 cup Water
1 cup of white rice
salt and pepper to taste
1/2 ts Peppermint
Juice of 1 lemon
15 oz. jar of grapeleaves

Saute onions in oil till transparent Add 1 cup water with the rice, salt and pepper
Mix well. Cover & cook till the water is absorbed. Remove from
heat, cool slightly & add peppermint and lemon juice Place 1 generous tsp
onto each grape leaf. Make one fold up from the base of the leaf, tuck in
the sides & roll up tightly. Place in a heavy saucepan & fold down,
packing the rolls tightly. Add remaining 1/4 cup of water and 3/4 cup of
olive oil place heat resistant dish on top of grapeleaves and cover pot cook
slowly over low heat
till almost all the liquid has been absorbed.
serve at room temperature makes about 45 grapeleaves


HUMMOUS BI TAHINI

2 cn Chick-peas (about 4 cups)
4 lg Garlic cloves
1/4 cup Tahini paste
1/4 cup of lemon juice
Drain chick-peas reserving some of the liquid. Mince garlic in processor
first. Then add chick peas and blend well add enough reserved liquid to form
a paste add tahini and lemon juice and blend well. serve at room temperature
with triangular pieces of pita bread

SWEET/SOUR MEATBALLS
2 lbs chopmeat
2 eggs
1 cup applesauce
1/2 cup breadcrumbs ( plain )
1/2 " grape jelly
1 12oz bottle chili sauce
12oz water

Blend meat with eggs,applesauce and breadcrumbs and form
into meatballs and place into a 9x13 baking dish
Combine chili sauce,jelly and water in a small sauce pan and on low heat cook sauce till jelly melts.... pour over meatballs and bake at 325 for 11/2 hrs and sauce has thicken


HcDoc's CHILI
11/2 lbs chopmeat
1 lb hot sausage ( remove casing )
2 28oz ea Progresso kidney beans
2 28oz ea " " " ( dark )
1 6oz whole kernel corn
1 envelope chili-seasoning
1 red and 1 green each pepper chopped
2 carrots,2 ribs of celery and 2 large onions all chopped
.. chili power,red pepper,white pepper and red hot sauce all to taste

In a large pot brown chopmeat and drain off the fat.After casing is removed from sausage place the sausage in small frypan.Cook sausage until done.Cut sausage into small pieces.
Add sausage to chopmeat and add all other ingredients.
Simmer for 2 hrs on low heat

Spanakopeta

12oz box of phyllo sheets
2 sticks butter-melted

2lbs. fresh spinach-washed and trimmed
1 large onion finely chopped
3T olive oil

1c. feta cheese
1-16oz. container cottage cheese
1/4 c. parmesan
2T. chopped parsley
2t. dill
6 eggs slightly beaten
1/4t. nutmeg
salt and pepper to taste

Brush the pastry sheets with butter and layer 1/2 in a
greased 9x13 pan.

Saute onion in oil until tender. Add spinach and cook
until wilted.

Combine cheeses, herbs, eggs and nutmeg.

Add cheese to spinach and mix-spoon into prepared pan.
Top with remaining pastry sheets and butter the top.

Seal edges and bake at 350F for 45 minutes until golden
and crisp.

Let stand 10-15 min. before cutting. Good served hot
or cold.

Ivan's Guacamole

2 ripe avocado's Scooped out and mashed
1/2 Red Pepper chopped fine
1/2 Green Pepper chopped fine
1 medium onion chopped fine
5 stalk of scallion w/green part chopped fine
2 cloves of garlic chopped fine
1 Jalepeno Pepper Chopped extra fine(use Birds eye if you like
real Spicy)
(take seeds out if you dont like too spicy )
1 cup chopped fresh cilantro
Juice of 1 lime or Three Tablespoons
salt and pepper to taste
a pinch of sugar

Add all veggies together including garlic,Jalepeno and cilantro.
(Adding Avocado LASTLY to prevent Browning )
Add the lime juice and season with salt, pepper & sugar.


Decorate with sliced Lime rounds and Cilantro

Have Tortilla Chip ready to taste.
